The Chef

From London to New York City and in between, Michael Hartnell has travelled the globe, gathering years of experience to inspire a beautiful menu at Mandoon Estate.

He is passionate about showcasing as many local gems as possible in his degustation menu - from local asparagus grown by the Swan Valley’s Edgecombe Brothers to mushrooms sourced from up the hill in Gidgegannup.

Michael loves the refreshing passion for good food and wine that is abundant throughout the tight-knit Swan Valley community.

“I’m very fortunate to meet and work with Swan Valley locals who have nothing but unbridled passion for the food, wine and produce that they have to offer,” he said.

“There are so many places that people might drive past, or producers who you may sit next to at a set of traffic lights.

“Entwined is all about encouraging people to step inside and see these places, meet the producers, and eat and taste what the Valley has to offer.

“I’m looking forward to showcasing all the Swan Valley has, and returning the sentiments that people have shown for their craft in my own.”
